The quality of the ‘vinaccia’, the grape skins, is crucial. Ideally, these should be as fresh as possible, so that the aromas and flavors are well preserved. Through fermentation, the remaining sugars are converted into alcohol. Depending on the producer, distillation follows in copper stills or distillation columns.
A matured grappa is referred to with terms such as Affinata (literally ‘aged’) or Riserva (minimally aged for 18 months). Each region of Italy also has its own approach, influenced by local grape varieties and traditions.
