De azijnboerderij van Gocce begon in de 18e eeuw in Modena, waarbij gebruik wordt gemaakt van eigen grondstoffen. Met 10 hectare aan wijngaarden, voornamelijk Witte Trebbiano druiven en Rode Lambrusco druiven, is het een gesloten kringboerderij omdat alle productiestappen in dezelfde fabriek plaatsvinden.
